Ingredients

For the dough:

  • 2 ¼ tsp active dry yeast
  • 1 cup warm milk
  • ¼ cup granulated sugar
  • 2 tbsp unsalted butter – melted
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 3 cups all-purpose flour (plus extra for dusting)
  • Oil – for frying

For the glaze:

  • 1 ½ cups powdered sugar
  • 3 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Activate the yeast. In a large bowl, mix 2 ¼ tsp yeast with 1 cup warm milk and ¼ cup sugar. Let it sit for 5–10 minutes until foamy.
  2. Make the dough. Add 2 tbsp melted butter, 1 egg, 1 tsp vanilla, and ½ tsp salt to the yeast mixture. Stir in 3 cups flour gradually until a soft dough forms.
  3. Knead and rise. Knead the dough on a floured surface for 5–6 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  4. Cut the doughnuts. Roll the dough out to ½ inch thick. Use a doughnut cutter or two round cutters to shape. Reroll scraps and repeat.
  5. Second rise. Place cut doughnuts on a tray, cover with a towel, and let rise for another 20–30 minutes.
  6. Fry the doughnuts. Heat oil in a deep pan to 350°F (180°C). Fry doughnuts 2–3 at a time for about 1 minute per side until golden brown. Drain on a paper towel-lined tray.
  7. Dip in glaze. Mix 1 ½ cups powdered sugar with 3 tbsp milk and ½ tsp vanilla until smooth. Dip warm doughnuts into the glaze and let them drip on a rack.
