Juicy peaches. Creamy burrata. Sunshine in every bite. This salad is pure summer simplicity — sweet peaches, creamy burrata, and a drizzle of balsamic glaze. No cooking, just layering sunshine on a plate.
Ingredients
- 2 ripe peaches, thinly sliced
- 1 ball burrata cheese (about 4 oz)
- 1 tbsp olive oil
- 1 tbsp balsamic glaze
- ¼ tsp flaky sea salt
- ⅛ tsp black pepper
- 1 tbsp fresh basil, torn
- 1 tbsp pistachios or walnuts, chopped
Instructions
- Slice the peaches. Use ripe but firm peaches. Slice them thinly and lay them out on a serving plate in a loose fan or circle.
- Add the burrata. Tear open the ball of burrata and gently place it in the center of the peaches. Let it ooze a little — that’s part of the charm.
- Drizzle and season. Drizzle 1 tbsp olive oil and 1 tbsp balsamic glaze all over. Sprinkle with ¼ tsp flaky sea salt and ⅛ tsp black pepper.
- Garnish to finish. Top with 1 tbsp torn basil and 1 tbsp chopped nuts (if using) for crunch. Serve immediately with crusty bread or eat it straight from the plate.
