Golden-fried chicken, tangy slaw, and spicy mayo packed into one epic bite. This sandwich brings everything you want in a fried chicken burger—juicy chicken, crispy crust, spicy-tangy sauce, and a soft toasted bun. It’s fast-food vibes leveled up at home.

Ingredients

  • 2 boneless chicken thighs or breasts
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • Oil – for frying
  • 2 burger buns – toasted
  • 1 tbsp butter – for toasting

For spicy mayo:

  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp honey

Toppings:

  • ½ cup shredded lettuce or coleslaw mix
  • 4 pickle slices

Instructions

  1. Marinate the chicken. In a bowl, mix 1 cup buttermilk with 1 tsp each of garlic powder, paprika, salt, and pepper. Add the chicken and let it soak for at least 30 minutes (or up to overnight for more flavor).
  2. Prep the dredge. Mix 1 cup flour with ½ cup cornstarch, a pinch of salt, and paprika in a shallow dish.
  3. Dredge the chicken.  Remove chicken from the buttermilk, letting the excess drip off. Dredge in the flour mixture, pressing to make sure it gets fully coated and craggy.
  4. Fry it up. Heat oil in a deep skillet over medium-high heat (about 350°F). Fry the chicken for 3–4 minutes per side until crispy and golden. Drain on paper towels.
  5. Toast the buns. Melt 1 tbsp butter in a skillet and toast the buns cut-side down until golden.
  6. Make the spicy mayo. Mix 3 tbsp mayo, 1 tbsp sriracha, and 1 tsp honey in a bowl. Taste and adjust the heat.
  7. Assemble the sandwich. Spread spicy mayo on both buns. Layer with shredded lettuce or slaw, crispy chicken, and pickles. Cap it with the top bun.
