Golden-fried chicken, tangy slaw, and spicy mayo packed into one epic bite. This sandwich brings everything you want in a fried chicken burger—juicy chicken, crispy crust, spicy-tangy sauce, and a soft toasted bun. It’s fast-food vibes leveled up at home.
Ingredients
- 2 boneless chicken thighs or breasts
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 cup all-purpose flour
- ½ cup cornstarch
- Oil – for frying
- 2 burger buns – toasted
- 1 tbsp butter – for toasting
For spicy mayo:
- 3 tbsp mayonnaise
- 1 tbsp sriracha
- 1 tsp honey
Toppings:
- ½ cup shredded lettuce or coleslaw mix
- 4 pickle slices
Instructions
- Marinate the chicken. In a bowl, mix 1 cup buttermilk with 1 tsp each of garlic powder, paprika, salt, and pepper. Add the chicken and let it soak for at least 30 minutes (or up to overnight for more flavor).
- Prep the dredge. Mix 1 cup flour with ½ cup cornstarch, a pinch of salt, and paprika in a shallow dish.
- Dredge the chicken. Remove chicken from the buttermilk, letting the excess drip off. Dredge in the flour mixture, pressing to make sure it gets fully coated and craggy.
- Fry it up. Heat oil in a deep skillet over medium-high heat (about 350°F). Fry the chicken for 3–4 minutes per side until crispy and golden. Drain on paper towels.
- Toast the buns. Melt 1 tbsp butter in a skillet and toast the buns cut-side down until golden.
- Make the spicy mayo. Mix 3 tbsp mayo, 1 tbsp sriracha, and 1 tsp honey in a bowl. Taste and adjust the heat.
- Assemble the sandwich. Spread spicy mayo on both buns. Layer with shredded lettuce or slaw, crispy chicken, and pickles. Cap it with the top bun.
