Ingredients

  • 3 ripe bananas – mashed (about 1 ½ cups)
  • ½ cup unsalted butter – melted
  • ¾ cup brown sugar
  • 2 eggs – room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup chopped walnuts or chocolate chips (optional)
  • 1 tbsp coarse sugar – for topping

Instructions

  1. Preheat and prep. Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash your bananas. In a large bowl, mash 3 ripe bananas until mostly smooth. A few lumps are okay — that’s rustic charm.
  3. Mix the wet stuff. Stir in ½ cup melted butter, ¾ cup brown sugar, 2 eggs, and 1 tsp vanilla extract. Mix until fully combined.
  4. Add the dry ingredients. Sprinkle in 1 ½ cups flour, 1 tsp baking soda, ½ tsp salt, and 1 tsp cinnamon. Gently fold everything together until just combined — don’t overmix!
  5. Add a little extra. If using, stir in ½ cup chopped walnuts or chocolate chips. Totally optional, but highly recommended.
  6. Pour and top. Pour the batter into the prepared pan. Sprinkle 1 tbsp coarse sugar on top for a crackly, bakery-style crust.
  7. Bake it up. Bake for 50–60 minutes, or until a toothpick in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  8. Slice and serve. Serve warm with butter, or toasted with a smear of peanut butter for next-level vibes.
