Juicy peaches. Creamy burrata. Sunshine in every bite. This salad is pure summer simplicity — sweet peaches, creamy burrata, and a drizzle of balsamic glaze. No cooking, just layering sunshine on a plate.

Ingredients

  • 2 ripe peaches, thinly sliced
  • 1 ball burrata cheese (about 4 oz)
  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze
  • ¼ tsp flaky sea salt
  • ⅛ tsp black pepper
  • 1 tbsp fresh basil, torn
  • 1 tbsp pistachios or walnuts, chopped

Instructions

  1. Slice the peaches. Use ripe but firm peaches. Slice them thinly and lay them out on a serving plate in a loose fan or circle.
  2. Add the burrata. Tear open the ball of burrata and gently place it in the center of the peaches. Let it ooze a little — that’s part of the charm.
  3. Drizzle and season. Drizzle 1 tbsp olive oil and 1 tbsp balsamic glaze all over. Sprinkle with ¼ tsp flaky sea salt and ⅛ tsp black pepper.
  4. Garnish to finish. Top with 1 tbsp torn basil and 1 tbsp chopped nuts (if using) for crunch. Serve immediately with crusty bread or eat it straight from the plate.
