Buttery mushrooms cooked down with garlic and cream, piled high on crunchy toast. It’s earthy, rich, and surprisingly quick — ideal for brunch, lunch, or even a lazy dinner with wine.

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • ½ tsp chili flakes (optional)
  • 2 tbsp chopped fresh parsley
  • ½ cup heavy cream
  • 1 tbsp cream cheese
  • 1 tbsp lemon juice
  • 2 cups sliced mushrooms
  • 4 slices sourdough or country bread
  • Salt and black pepper, to taste
  • Grated parmesan, for topping

Instructions

  1. Sauté the mushrooms.Heat a skillet over medium heat. Add 2 tbsp butter and 1 tbsp olive oil. Once melted, toss in 2 cups sliced mushrooms. Let them cook undisturbed for a few minutes to get that golden edge. Stir occasionally until they’re browned and slightly reduced, about 7–8 minutes.
  2. Add flavor. Toss in 1 tbsp minced garlic and ½ tsp chili flakes (if using). Cook for another minute until fragrant.
  3. Make it creamy. Pour in ½ cup heavy cream and stir in 1 tbsp cream cheese. Let it simmer for 2–3 minutes until thickened slightly. Add salt, pepper, 1 tbsp lemon juice, and 2 tbsp chopped parsley to brighten it all up.
  4. Toast the bread. While the mushrooms are doing their thing, toast your sourdough slices until golden and crisp. Do it in a pan with butter if you want extra richness.
  5. Assemble your toasts. Spoon that creamy mushroom mixture over each slice of toast. Sprinkle with grated parmesan if you’re feeling fancy. Serve immediately.
